Tonight I made some pretty tasty muffins for the family. As you can see above, they are called "Amy's Sweet and Deee-licious Vegetable Health Muffins". I'm always modifying recipes to make them healthier. Some are a little too healthy, but this one's a real winner. After I tried one, I briefly entertained the idea of quitting speech therapy and going into muffin and cookie inventing, but realized that I better keep working b/c John's new Micron family insurance plan sucks and I think I'll have to take the whole family back to my insurance next year. Recipe as follows:
1 c white flour
1 1/3 c whole wheat flour
1 c wheat bran
1/3 c wheat germ
1/3 c flax meal
4 t baking powder
1/2 t salt
3 t cinnamon
1 t pumpkin pie spice
1 stick 'o butter (no loaves of bread or bottles of milk though :)
1 c applesauce
1 1/3 c sugar
4 eggs
2 t vanilla
1/2 c milk
3 c shredded zucchini (drained of juice on paper towel)
1 c shredded carrots
3/4 c dried unsweetened coconut flakes
Preheat oven to 375F. Mix together all wet ingredients, then add dry ingredients. I used hand mixer. Fill 24ish muffin tins 2/3 full. Cook 25ish minutes. Wa-lah...a healthy tasty treat for you. Please note that with most recipes that I may publish, the measurements are approximations or "ish-es" as I like to say. Enjoy!

these do sound deee-licious! i will have to give them a try. i have been loving "hiding" more veggies in stuff since kate gave us the deceptively delicious cookbook. sounds like you are a smarty pants who is doing her own version of deceiving. i am not so good at winging it with cooking...need a bit more help! miss you
